The Nest Cocktail Bar & Kitchen opened in mid-April at Robin Hills Farm on M–52 north of Chelsea. Husband-and-wife chefs Vanessa and Phil Coulson had been parking their food truck, Sanich Union, at area venues, including Robin Hills. They won over management with a menu that included beer-cheese dip made with Bell’s Two Hearted Ale and smash burgers featuring Michigan beef.

Those items plus shareable plates, salads, sandwiches, and entrées, are now served Thursday through Saturday evenings; Vanessa says Phil’s duck-fat dumplings and their fried pimento-cheese pierogies are already customer favorites. Sunday brunch includes Nutella French toast with sweet mascarpone, homemade sausage, and asparagus-and-mushroom omelets.

The Nest seats up to 100 indoors with outdoor seating doubling capacity in the warmer months. General manager Petra Sanz says the space will continue to feature its “elevated cocktail and mocktail menu,” with infused alcohol and simple syrups, all made in-house.
