Rooted in Flavor: Cozy Winter Cooking: Ann Arbor Public Schools Rec & Ed
When the snow falls and the markets slow, it’s time to celebrate the humble heroes of winter—the root cellar veggies! Join community farm chef Kori Kanayama for a cozy, hands-on cooking class that brings fresh flavor to Michigan’s coldest months.
Kori—originally from Japan and now happily rooted in Grass Lake—will guide you through creative, seasonal recipes that transform local staples like potatoes, carrots, radishes, squash, and apples into vibrant, nourishing meals. You’ll chop, simmer, and braise your way to a hearty spread featuring comforting dishes such as miso soup with tofu and winter greens, braised radishes and beans, Japanese-style meat and potatoes, and baked apples with homemade sorghum syrup.
Cooking together in small teams, you’ll learn new techniques, taste as you go, and enjoy a shared feast at the end of class. You’ll leave with recipes, local sourcing tips, and a few leftovers to keep the winter warmth going at home.
Come hungry—and ready to rediscover the joy of cooking with what’s fresh, local, and wonderfully in season.
