Coming to Saline

At the end of September construction began in the Commons at Sauk Trail space long ago vacated by Flaming Shish, just north of Saline's Emagine Theatre. It'll be a Bone Heads BBQ by the end of the year.
"Our Willis location, open for ten-and-a-half years now, is in a far more rural setting, a destination stop for many. It offers an extensive menu beyond just the barbecue, things like seafood and steak," says Chris Clancy, reached by phone. He and Christy Loehrer comanage the Willis Bone Heads and will also manage the Saline location.
"We're scaling it down a bit in Saline and focusing on the barbecue, on what we do best, like brisket, ribs, and pulled pork," says Clancy, along with classic sides like coleslaw, collard greens, baked beans, mashed potatoes, and corn bread. He says they're "still hammering out some of the menu details, like what desserts we'll offer."
Once construction is finished, hopefully by mid-December, the comanagers will hire about eight to ten full-time and part-time employees. The plan is to be open seven days a week for lunch and dinner and to time the restaurant's daily closing hour with the start of the last movie showing at Emagine.
"We'll be able to seat about fifty-four people, but what's really exploded these days is our catering and carryout, and we'll be doing a lot of that in Saline," says Clancy. He says that they'll reach out to schools, too, to discuss catering events.
"We're in no rush here. We want to take our time and get it right," he says.
