A Canine Food Truck in Chelsea

The Brown Bassett goes mobile.

The Brown Basset dog bakery, which opened last summer, closed its brick-and-mortar location in April, but owners Staci and John Tripolsky will launch a mobile version of the business in late June.

"We realized there's so much demand--and we've received so many invites--for vendor shows and pop-up shops," Staci says. "We did more market research on dog bakeries and learned that for the ones that have boomed, the trend is to be mobile. It's more lucrative too."

She's busy outfitting a "food trailer" that will visit local dog parks, veterinarians' offices, farmers markets, and special events. Meantime, she's still filling special orders and delivering to customers via the Brown Basset's Facebook page.     (end of article)
