Food Trucks Come to Saline

Stony Lake Brewing adds rolling food service.

Stony Lake Brewing Co. added a patio last summer; this summer's big hit, apart from their popular beers and ciders, has been food trucks. Owners Jerry and Heidi Tubbs started booking the trucks on weekends.

Jerry admits that he was late to the game--most food trucks are reserved months ahead of time. For his first season, he's been lucky with Ann Arbor's Cosa Sabrosa and Milford-based Fortune Cooking. Cosa Sabrosa serves Mexican street food (Tubbs recommends the fish tacos). Fortune Cooking is owned by local celebrity chef Tom Lin, who says he's loved his gigs at Stony Lake. "Every time I've been there, I get requests to come back on my social media," says Lin, who competed last year in the Food Network's "Great Food Truck Race" and won an episode of "Cutthroat Kitchen" in 2015. Lin's Asian-xADfusion menu changes seasonally. "Right now I'm making ahi tuna, salmon rice, and an assortment of Thai food," he says.

Tubbs has been hosting food trucks most Thursday through Saturday nights. "So far, each sells out within hours, and it's fun because food trucks and craft beer go together so well. Every once in a while, I'll reserve a truck for a Tuesday. The food trucks don't put any more burden on me, except that I'm taking out more trash. That's a good problem." He keeps his customers updated about new brews, music acts, and food trucks via Facebook and Instagram. "I've got a new truck coming in a couple weeks: Wood Fired Up. It serves artisanal pizzas." He'll keep bringing in trucks till the snow flies, and says Cosa Sabrosa will be there even after, as long as the temperature's above 25 degrees. "I'll be booking them far in advance next season," he says.
